When the weather is as cold as it has been over the last few days, nothing warms me through and sets me up for a busy day like a bowl of steaming porridge does. Sometimes though it all feels a bit of a rush in the mornings so I’ll sometimes prep my breakfast the night before and then all I need to do in the morning is give it a stir, stick it in the microwave for 2 minutes and voila!
For this recipe I’ve added chia seeds to the oats to pack in a protein hit, and some natural sweetness in the form of banana and dates. This recipe is for 1 bowl but it’s easily multiplied if you wanted to make 2 or 3 so you’ve got breakfast ready for the following day or 2.
6g chia seeds
185ml milk (any kind you like)
Half a ripe banana, mashed
3-4 squishy dates chopped into small pieces
Small handful of chopped walnuts for a little added crunch
Just mix everything up together, apart from the walnuts, and leave in the bowl (uncovered) in the fridge overnight. In the morning give it a stir and sprinkle the walnuts on and microwave for 2 minutes. The banana and dates add a real sweetness, the dates go extra soft overnight and the oats and chia seeds will stop your tummy from rumbling too soon!!!
