I do like my pancakes and have created a super quick recipe which is perfect for putting together in the morning and leaving to cook whilst you get ready for the day. The recipe below serves 1 but is easily doubled.
I ripe mashed banana
Simply mix the banana, egg and oats in a bowl and then stir in the berries. Heat some coconut butter in a large frying pan and cook on a medium heat (flipping when firm on the underside). Serve with a teaspoon of honey drizzled over the top or you could top with some nut butter. Delicious!!
